These chicken bacon kabobs are made with fresh pineapple, onions, peppers, and bacon. You can grill them in the Summertime or make them in your air fryer. I recently updated this post to include air fryer instructions because who doesn't have an air fryer in their house these days?

Ingredients Needed

Grilled Bacon, Pineapple, Chicken Kabobs - Recipe Diaries (2)

Chicken - Cut boneless skinless chicken breasts into equal bite size pieces

Fresh Pineapple - Cut to about the same size as the chicken pieces, will help with the cooking time

Onion and Bell Pepper - Again cut these to the same size as the chicken and pineapple. I don't always use a bell pepper when making these. It's not pictured above.

Bacon - thinly sliced

Chicken Marinade - Canned Pineapple Juice, cornstarch, brown sugar, soy sauce

How to make Bacon, Pineapple, Chicken Kabobs

Step 1: To make the Hawaiian sauce: Combine all ingredients in a medium saucepan and stir until the cornstarch is dissolved. Bring the mixture to a boil, reduce the heat to medium and simmer for 2 minutes. Set-aside until ready to use.

Step 2: Thread the skewers. Weave the bacon around each piece of chicken and pineapple, stick the bell pepper and onion together and weave the bacon around both of those. You'll need two strips of bacon per skewer if using 4 pieces of chicken and 3 pieces each of pineapple, bell pepper and onion. Brush some olive or vegetable oil evenly over each kabob.

Step 3: Preheat the grill to medium high. Grill the kabobs for 10-15, turning a couple of times, until done.

Step 4: Slather with hot Hawaiian sauce and serve immediately.

Air Fryer: Set the temperature to 400 degrees and the time for 5 minutes. Place kabobs in air fryer basket. Flip kabob over and cook for another 5 minutes. Enjoy!

Best Grilling Tips

  1. Always Start with a clean grill. Make sure last nights dinner isn’t stuck on it. 😉
  2. Get any type of meat thermometer. This will help to check for proper doneness and to make sure the meat is at the proper temperature.
  3. Grilling is done at very high heats to cook food faster. Smokers are used for low and slow cooking.
  4. Know when to use direct heat.
  5. The best outdoor type grills are Webber or Blackstone. Blackstone are a flat top cooking service that don’t have any grates in them.

Make a marinade or brine to soak the chicken in prior to cooking it on the grill on high heat. This will ensure a juicy flavorful chicken. Add some acid to it like a fresh citrus fruit such as lemon.

Chicken kabobs can take anywhere from 8 - 12 minutes on a grill. To have perfect chicken kabobs everytime make sure all the ingredients are the same size.

  • 2 pounds of boneless skinless chicken breast
  • 1 large pineapple, cut into 1 ½ inch chunks
  • 2 large red bell peppers, cut into 1 ½ inch pieces
  • 1 large onion, cut into 1 ½ inch pieces
  • 12 strips of thin cut bacon
