Nothing, welcomes fall like a warm Pumpkin Spice Latte. My pumpkin spice lovers know what I’m talking about! Do you want to know how to make a Pumpkin Spice Hot Latte with no pumpkin.

Why no pumpkin? Pumpkins are heavy in lectins but I’m going to share the Lectin Free Wife’s pumpkin spice tricks and tips, including several pumpkin spiced recipes so, you can still enjoy Pumpkin Spice season without the lectins. You’re welcome!

Are you a pumpkin spice lover? Me too. I’ve heard people say, “Pumpkin spice is basic.” and if pumpkin spice is basic, I am the queen of basic town. Yep-I’m that girl.

When pumpkin spice season rolls around, my favorite saying is, “It’s fall, Y’all.” Which is actually kind of funny being from Texas there isn’t actually a true fall. For those of you whom have yet to visit the Lone Star State, we have a time of year that we call “fall” but it isn’t where all the leaves turn beautiful shades and the ground is covered in gorgeous red, orange, and my favorite color of all GOLD leaves. Oh no, not in Houston. In Houston, our seasons are summer, summer, fall-winterish, summer. Our fall consists of a cold front rolling through and all the leaves turn brown and immediately fall off the trees in a week, then it’s 80°F the next day. I think this is why they say, “If you don’t like the weather today in Texas, wait until tomorrow, it will change.” So far, I have only visited Georgia and Maine during the fall season, where I experienced the gorgeous fall colors in real life. It is one of the most beautiful sights and nothing compares to its colorful beauty. BUT, that doesn’t stop me from trying to replicate my own fall at home. October 1st rolls around and I fill my porch with pumpkins and artificial fall leaf garland. Pumpkin Spice Seasoning seems to work it’s way into all my foods and drinks.

Writing this post, this reminded me of a funny story. I’m literally sitting here laughing so I thought I’d share… When I was a kid, I HATED trees, I swore and knew for a fact- when I grow up, “My house will never, ever, ever, ever have any trees on it!” I thought my parents were absolute lunatics for having trees on our property. I grew up in a small town on a small piece of land- with several HUGE oak trees in our front yard. One of these oak trees was at least a 100 years old and canopied over our small craftsman home. Sounds beautiful painting, right? The thing is, my brother and I were in charge of raking leaves. My brother was 8 years younger than me, in addition to his “allergies” that would pop up during raking season, he has an unbelievable talent for hiding any time actual work needed to be done. Seemed like the majority of the responsibility fell on me. So every year, a cold front would come through. The leaves would fall. All weekend, my brother and I would rake, crying, kicking, angrily stuffing huge black trash bags full with leaves and the dragging them down our picturesque tree lined driveway to the street for trash collection, planning our future homes with tree-less yards, all the while- hating our parents the entire time, knowing their ONLY reason for having children was to torture us with manual labor. Y’all, plzzzz tell me I’m not the only one who acted this way as a child! When all the leaves were raked and there were 8 huge trash bags of leaves by the street, I would wake up the next day for school and it was like we hadn’t raked anything at all. It was a viscous cycle. My, my, my how the tables have turned- writing this post about how I love falling leaves!

HOW TO MAKE PUMPKIN PUREE WITHOUT USING ACTUAL PUMPKIN…

  • Sweet Potatoes. Sweet potato puree replicates the flavor and texture of pumpkin puree so you can still have your pumpkin spice latte flavor without the lectins. No one will know it’s actually a sweet potato spice latte but you AND your happy gut as you glide through the day without digestive discomfort!

  • Stock up. When it is pumpkin spice season- Keep this Pumpkin Spice Seasoning in your pantry AND sweet potato puree ready in the fridge.

Sugar-free Whipped Cream…

Making Sugar-Free Whipped Cream is easy and the absolutely perfect topping on the this Pumpkin Spice Iced Latte. Making whipped cream without real sugar is a little different than making it with real sugar because the time is much longer. Making delicious this version of sugar-free whipped cream will take you about 10 minutes of whipping time compared to the 1-2 minutes real sugar takes. Follow these simple steps to make sugar-free whipped cream.

  • 1 c of organic heavy cream or coconut cream (from a can and chilled in the refrigerator ahead of time)

  • 1 tsp vanilla extract

  • 3 tbsp powdered monkfruit sweetener (like Lakanto)

  1. Put your mixing bowl and whisk(s) (for stand mixer or electric mixer) in the freezer for 20 minutes before you are ready to get started. (You can’t see the whisk in the picture but it in in there.

  2. Measuring your ingredients ahead of time so you can move quickly when the bowl is ready.

  3. Remove mixing bowl/whisk from freezer, add measured ingredients, and turn mixer on high for about 10 minutes or a little longer depending on the thickness.

*Whipping times will vary, however, so far in my experiences- I have not been able to reach stiff peak like with regular sugar. Much longer than 10 minutes and it’s texture gets lumpy and it begins to separate.

Pumpkin Spice Hot Latte

INGREDIENTS

Here’s all the goodies you need to make a Pumpkin Spice Hot Latte.

  • 1/2 c almond milk

  • 2 tbsp sweet potato puree

  • 1/2 tsp maple extract

  • 1/2 tsp pumpkin spice seasoning

  • 1 tsp monkfruit sweetener

  • 1/4 c - 1/2 c strong coffee

  • sugar-free whipped cream

INSTRUCTIONS

Here’s how to make a Pumpkin Spice Hot Latte at home.

  1. If making sugar free whipped cream, make this first

  2. In a small sauce pan or butter warmer, heat almond milk until warm and begins to simmer on outside edges of pan

  3. Add puree, maple extract, pumpkin spice seasoning, monkfruit sweetener, and strong coffee- combine with whisk and remove from heat

  4. Carefully pour into insulated cup, top with whipped cream and sprinkle top with extra pumpkin spice seasoning
