I cooked this tonight and followed the recipe almost exactly (I had less than 3.5 cups of chicken). I was nervous about the amount of salt called for in the boiling water, but since both the snap peas and noodles were run under cold water after cooking, most of it rinsed off. In fact, the dish came out fantastic! Not too salty at all. The flavors were delicious and it presented beautifully. Looking forward to making it again.

This recipe caught my eye for its simplicity and adaptability. As Genevieve suggested I've been adding shredded cabbage and shaved carrot to the bowl. The pickled daikon makes it outstanding. To liven the dressing I've been adding a little grated ginger and minced garlic. My go-to soba is Eden Selected 100% buckwheat far superior than the buckwheat/wheat blends but it's more expensive - only cook for 7 minutes! This would be a great lunch box salad.

Double the sauce and halve the noodles. Substituted carrots for radishes. Perfect dish for a hot night.

Turned out delicious with few changes:- used thinly sliced shredded purple cabbage instead of daikon (out of radishes)- realized I didn’t have enough honey, used simple syrup with some brown sugar for 2nd tablespoon in sauce- substituted brown rice udon for soba which gave it a delightful chew - used air fried crispy tofu in lieu of chicken

I used green tea soba, bok choy, asparagus, and gourmet mushrooms ( enoki and lion’s mane). Stir fried veggies lightly and mixed with soba and sauce per recipe. I would add more sesame sauce and fish sauce next time. Delicious!

Love a simple, adaptable recipe! As others have suggested, we also like to double the sauce and add a generous amount of grated garlic and ginger. We also swap in ingredients based on availability like watermelon radishes, shredded lacinto kale, or whatever sounds good. Ingredients can be dialed up or down based on tastes. Such a simple, satisfying, and healthful recipe for a warm day.

I didnt have daikon or radishes so skipped that step and since I wanted this warm sautéed some onion, cabbage and carrots that I added last. Used Aleppo pepper since I had that. Really enjoyed half this as a dinner for one

We loved this. Match green tea soba from Tokyo Fish (make THOSE again!). Asparagus and snow peas, 2 X recipe. Added chopped ginger & a little fish sauce to sauce, 1/2 honey, reg radishes, garlic scapes chopped and sauteed in toasted sesame oil. Scallions, add more red pepper flakes. Will keep for three days, but there wouldn't be anything left by then!!

I used the sauce as a starting point and can understand why most cooks here found it bland. Boiled anything puts me off. I found it delicious with considerable alteration. I upped the soy sauce, cut the honey in half and added a drop of fish sauce. I stir fried veggies i had on hand: bok choy and sh*takes, plus a little chopped garlic and ginger. I topped it with a piece of pan fried cod. Not too shabby.

I chose this recipe for it's simplicity and expected it to be just okay. It's surprisingly delicious. No daikons to be found here so subbed in red radishes. Add julienned carrots for color. Doubled the sauce because I used three bundles of noodles instead of two. Will definitely make it again. Adaptable, simple, delicious.

This recipe is very mild. It tastes almost undressed when made per the instructions. There’s nothing bad or unpleasant about it, just dull. The pickled daikon is a keeper tho.

This was so simple and delicious. I will admit, as I was making it I was thinking hmmm is this going to be satisfying? Will this need a fried egg or something. Nope! It was perfect as-is

Hunkered down in VA BCH...subbed carrots for daikon...what I had. Otherwise executed recipe as written. Really excellent and simple.You should make this tonight.

Delicious. Made as in recipe, but instead of shredded chicken I marinated chicken breasts in lime juice, low sodium soy sauce, sesame oil, fish sauce, rice vinegar, a little mirin, and gochujang, and then grilled them and sliced. Also normal radish will work fine in the place of daikon, and adds a pop of color.
