I‘ve been making this for years and it’s always a hit. The “healthy” ingredients are definitely out dated and I’ve always done what the other successful reviewers suggest: real eggs, full fat cheeses and 2% or whole milk. I’m also heavy handed with the mustard, nutmeg & pepper. Tastes good leftover.

We make this at least once a month. Everyone loves it. Even my kids gooble it up. I use 4 eggs instead of the egg replacer, and regular cheddar cheese. Add all the nut!eg, mustard, pepper. Go light on the salt and we add just a tiny portion of the hot pepper (we like very mild).

I have been making this for years and have a few suggestions... I use a pound of spinach (from Sam's Club) and put about a third of the spinach into the dish and sprinkle it with about a third of the cheeses, ( I use extra sharp regular cheddar and pepper jack) and put it into the oven for a few minutes to wilt down a little. Then add the rest of the spinach and milk mixture (2%, not fat free) and then top it with the remaining cheeses. Use a heaping teaspoon of baking powder and a 1/2 teaspoon of cayenne and it will turn out perfectly!

I thought this was good, and my women's group raved about it. I made some minor adjustments, using real eggs, whole milk, and regular cheeses. (I accidentally used Mozzarella instead of Monterey Jack.) It is still pretty healthy. When assembling the dish, I thought it was going to overflow, but everything worked. The final result looked very nice, not at all like the picture.

This was not good :( The flavors did not flow together correctly. Do yourself a favor and skip over this. YUCK

I followed the recipe to a T, but was disappointed with the result. The texture was really weird and with the reduced fat cheese there was a bit of a fake or chemically taste. I won't be making this again.

I thought this was really good idea but tweaked it a little to suit my diet. I used Feta and Mozzarella cheese, real eggs, and cream rather than milk. Not as "healthy" as the original, but I prefer to eat real food rather than food substitutes.

I made this and my husband and I actually really enjoyed it. He of course added some hot sauce to his serving. I did make a few adjustments: Instead of 2, 6oz. bags of spinach, we only used one (all we had) and we used red pepper flakes (all we had) instead of ground red pepper. It was flavorful and easy to make. We will def. make it again, but maybe add some mushrooms and onion.

I want to like this recipe. It's so easy and uses items I readily have on hand, and in fact the flavors are quite good. My problem was with the texture, in that my spinach got pretty slimy. Also, as someone who loves spanikopita, I think I'd prefer feta to the cheeses suggested. Or I might try this with broccoli and/or cauliflower instead of spinach. But probably would not make as-is again.

I'll definitely make this again--quick, easy, and good! I agree with the others; this is not bland. It was almost like a spinach omelet. Next time, I think I'll try adding a clove or two of garlic for something different.

I turned this into vegan by using soy dairy products and margarine. The result was pretty decent but the crust was not flaky as in the picture. Also took about 20 minutes longer to cook. I am thinking about putting turkey or tofu into the casserole. It has really good flavor I like the dijon but I usually like feta and spinach together just couldn't find vegan feta cheese. (I am neither vegan nor vegetarian just on a summer health kick)

This is our go-to brunch dish when we entertain. I don't think it looks unpresentable and everyone we've served it to loves it. I follow the recipe exactly, and we don't think it's bland at all. The nutmeg and ground red pepper are key. I usually serve with the oven-puffed pancakes (Cooking Light 2001), some fruit and a meat (like turkey or chicken sausage).

We loved this vegetarian main course. It is very easy to assemble. The nutmeg is essential. We were skeptical after we assembled it, and even more skeptical after it had baked, but the flavor was great. We'll definitely make it again, but I would hesitate to make if for company because of the way it looks. The photo is an accurate representation.

This recipe was VERY bland - I cook all the time and love to try new recipes - unfortunately, I didn't read through the reviews for this recipe. It definitely needs something to make it "interesting".

This is a great recipe. Everyone I have had try it rates it really high as well. When I do not have baby spinach, I use regular and it still comes out great. The spices are what makes it taste so good. I have made this multiple times and it comes out great with rave reviews each time.
