This is one of those recipes that I have been asked for A LOT over the years. I think people ask for the recipe because when they eat it, they think it is absolutely delicious. It happens to be a bonus that this chicken chili recipe is almost ridiculously easy to make. It takes about 7 cans and a packet of stuff plus some chicken breast and a crockpot, 8 hours of time and a bunch of hungry people and you have a huge dinner success!

Here’s the thing. I am not a chili purist… I am just a mom that likes good food and doesn’t have all that much time to make it. I love this recipe because it is equally yummy and easy. For the same reasons, it makes a great meal to bring to a friend when they have a baby or need a helping hand. It freezes well so it can make a great freezer meal before or after you cook it in the slow cooker. It is perfect hearty meal for a week night and can warm up the coldest of days. It is the kind of recipe you are going to want to save for yourself and share with your friends. And now I am going to let you in on the little secret of just how easy it is.

Super Easy {and delicious} Crock Pot Chicken Chili Recipe

To whip this up all you need to do is chop up an onion and add it to the bottom of your crock pot. I usually use a red onion but any will work. Next lay your chicken breast on top of the onion and sprinkle the taco seasoning on. Layer each of the canned ingredients on top of the chicken breast and pour your beer or broth on top. Set the crock pot to cook on low for 7 hours and when it is done use tongs or a fork to shred the chicken breast up. This too is super easy becuase after cooking for 7 hours it will literally just fall apart as you touch it with the tongs. Give it a mix and let it cook for 1 additional hour. Tada! There you have it… the secret to super easy and super delicious chicken chili.

Make sure you serve the chili piping hot, and with lots and LOTS of yummy toppings! Some of my favorites are sharp cheddar cheese, sour cream, cilantro, avocado, and crushed tortilla chips. We all really like the toppings at our house. I have been known to add one, two, or all of them and devour the bowl in no time flat!

Ingredients

  • 1 Onion
  • 3 Boneless skinless chicken breasts
  • 1 Package taco seasoning or 2 Tbsp Homemade Fajita Seasoning gluten free
  • 1 Can black beans
  • 1 Can chili beans
  • 2 Cans rotel I use original for just a tiny kick
  • 2 Cans whole kernel corn drained
  • 1 10 oz can tomato paste
  • 1 bottle of beer or 1.5 cups chicken broth

Instructions

  • Chop the onion and place it in the bottom of your crock pot

  • Layer the chicken breast on top of the onion and sprinkle the taco seasoning on top of them.

  • Add the canned ingredients on top of the chicken and seasoning {beans, rotel, corn and tomato paste}

  • Pour your beer or chicken broth over the top of the mixture

  • Cover and set your crock pot to cook on low for 7 hours.

  • Use a fork or tongs to shred the chicken and mix the chili to evenly distribute.

  • Cook one additional hour.

  • Serve hot with toppings of your choice!

  • Topping suggestions: sharp cheddar cheese, sour cream, cilantro, avocado, tortilla chips

    Late to the game but looking forward to trying this. Any suggestions for corn substitution as we have a family member with sensitivities?

      You can just leave the corn out if you prefer. It won’t impact the end result negatively.
