The ingredients are awesome! However this was WAY too sweet for us. I did use equal amount of unrefined sugar in place of the granulated sugar, but that shouldn't have made a difference at all. If I use this recipe again, I'll either use more sweet potatoes or cut back the overall sugars. :-)

I made this for 3 adults who are not fans of "sweet potatoes, casserole or otherwise!". WE LOVED IT! I pretty much made it exactly per the recipe- maybe a little less granulated sugar (I ran out) and a little more pecans ( I love pecans). Great recipe, great instructions, and really great flavor! Thank you

This complaint is about the accompanying video, not the recipe. The video's acdtions don't match the commentary. Twice she said "add _______" and you see what she does before the audio. At one point she said "add salt" and the video shows her adding vanilla....and then the vanilla isn't mentioned at all! Also, there's no link to the video on the recipe page. Maybe the problems are why there's no link!~

Baked 4 small sweet potatoes (2# total) in the oven and cut sugar back to about 1/4 cup (next time I'll use even less). Family loved it. The flavorblended well with our traditional Thanksgiving menu items.

I made this for Thanksgiving and it was loved by all! I foil wrapped and baked 4 one pound sweet potatoes in the oven until soft, peeled and tossed in the stand mixer. Even though I doubled the potatoes, I only used one plus 1/2 of the other ingredients. I whipped it up, minus the topping, and put it in the fridge the night before. Next day, I added the topping and popped in the oven. Everyone loved, and was happy not to see any marshmallows. Delicious is all I have to say!!

Good recipe. Reduces fast and very tasty. For my family I need to decrease the sugar content; they found it a bit too sweet. Otherwise, I recommend it.

Made this to take to a Thanksgiving dinner. Baked potatoes in oven (probably used about 3# of sweet potatoes), reduced sugar to 1/2c, increased butter to 4T, increased evaporated milk to 1/2 c. Assembled in crockpot and cooked on low for about 3 hours with good results. Will definitely make again.

A very good lightened version of a sweet potato casserole that my aunt used to bring to Thanksgiving dinner. I cannot tell at all that it has been lightened. Followed the recipe exactly and will make again.

Love this dish.....but have made some changes. I use 2 Tbsp of sugar instead of 3/4 cup and save 484 calories in sugar. You can really taste the sweet potato and it's sweet enough with the delicious topping. One ingredient change I made in the topping was swapping out white flour with whole wheat flour. Enjoy!

I make this for Thanksgiving/Christmas every year my family hosts. My dad hates sweet potatoes but still loves this. As others suggested, I do bake instead of boil to retain some more flavor (peel and chop up sweet potatoes, spread out on pan and cover with foil at 350 for 45 mins), and cut the sugar in for the potato portion (not the topping of course!). I'm a little heavy-handed with the pecans too. Reheats great as leftovers, too. Goes really well with the green beans with pine nuts and garlic (also CL recipe) for holiday sides (mom makes homemade full fat stuffing, no "light" there ;P).

This was wonderful. My family couldn't stop sneaking in for just one more spoonful. I cut the sugar a bit and used 1/2 cup and found that was plenty. Cooked it in 8x8 pan for 8 minutes longer and that worked well. Found that I did not use all of the topping so next time I make this I will only make 1/2 of the topping amount. Superb recipe!

This is just a great recipe, one that you'll go to year after year. I doubled it as my family loves sweet potatoes, and these are excellent as leftovers. I use a little less sugar in the topping and a few more pecans. This year I forgot about the evap milk and substituted light sour cream - that worked great. Also used honey instead of sugar in the potato mix - also delicious.

I call this "sugar with some sweet potatoes", but it's a staple on our Thanksgiving table. I make a double batch every year and it's a family favorite. I love sweet stuff, so I wouldn't alter the ingredients a bit.

Was a hit with my family. I used yams and reduced the sugar to 1/3 cup per other reviews and it was still plenty sweet. I also the baked the yams (peeled, cut up, in oven covered with foil 45 minutes at 350) but the basic recipe is definitely a keeper. Thanks to all the hints from other reviews

My son who has never even wanted to try a sweet potato will eat this...which says alot! With this recipe you can easily add 2 -3 more potatoes with no loss in flavor. I have had many requests for this recipe and is a must-have at church get togethers. Substitute oats for pecans for non- nut eaters.

Delicious and easy recipe! I made these for Christmas dinner and received numerous compliments as well as requests for the recipe. I labored over the perfect sweet potato recipe before settling on this one as many family member requested sweet potatoes but said they didn't like the traditional overly sweet marshmallow topped sweet potato casserole. This was perfect and really easy to make. I doubled the recipe with no problems at all. I increased the amount of sweet potatoes slightly and cut the sugar in half-still sweet but not over the top and great sweet potato flavor. Excellent-will make every Thanksgiving and Christmas for now on (I have already been asked to!)

I made this casserole for our family Christmas dinner, and everyone loved it. I cut the sugar to 1/2 cup per previous reviews, and it was still like a dessert. My two-year old didn't want anything else to eat--just the sweet potatoes. This is the best sweet-potato casserole we've ever tried, and I will definitely make it throughout the year (not just for holidays).

Way too much sugar! Not much better than the old marshmallow-topped version. (Isn't this Cooking LIGHT?) However, the recipe was still great using only half the sugar and putting only half the topping on. Good idea to bake not boil potatoes also - conserve flavor.

I also baked the sweet potatoes instead of boiling to maintain all of their nutrients and flavor. 350 for about 45 minutes and then you can just peel the skin away. very easy! I will definately make this dish again!

LOVED it! Yes, I also noted it was a tad sweet, but easily adjusted. I too used milk (1%) instead of evaporated. I've shared this with several friends, and am taking it to family Thanksgiving. Plus, I live alone, and have scaled it down so I can make it for myself - which I will! Two, med-large potatoes made quite enough for me for several days - even with snitching! :)

This dish was amazing! Took for a dinner party and everyone loved it! This was my first time making a sweet potato casserole, and it was surprisingly simple! Make sure to not skip the broiling part - it gives the crumble on top the perfect crunch! The only think I changed was I used skim milk instead of evaporated milk because that's what I had on hand. Also, I bought 3 large sweet potatoes which I think ended up being a little more than 2 lbs. This is definately a keeper! Thanks for another good recipe CL!

FAQs

How do you make a sweet potato casserole not runny? ›

Eggs and cream help stabilize the dish and prevent it from becoming too runny (a common complaint with many sweet potato casserole recipes). Make it as smooth or chunky as you like!

Why put egg in sweet potato casserole? ›

Eggs help bind and lift the casserole for a light, set texture once baked. Sweet potato casserole can also be made without eggs, if needed.

What's the difference between sweet potato pie and sweet potato casserole? ›

The difference is that sweet potato casserole can either have a toasted marshmallow top or a crunchy brown sugar/nut top and is made with brown sugar in the casserole. Sweet potato pie is made with white sugar, has nothing on top, but can be served with whipped topping.

Why is my sweet potato casserole so watery? ›

Why is my sweet potato casserole watery? If you overcook your sweet potatoes, they may begin to absorb too much liquid, making them watery. It's important to cut your potatoes into equal-sized pieces so that they all cook at the same rate. Make sure to remove them from the steamer as soon as they are fork-tender!

How do you make a casserole less runny? ›

Simply whisk equal parts butter and flour together. Then, roll the thick paste into little teaspoon-sized balls. Add one ball to your casserole at a time, waiting about a minute before adding another one, until you get the right thickness.

Can I leave eggs out of sweet potato casserole? ›

Eggs (or not!)

– I've made this sweet potato casserole with and without eggs, both ways are delicious. The eggs act as a binder and gives the casserole a light and fluffy texture. Without eggs, the casserole doesn't have as much structure but it still silky smooth and tastes delicious.

Why do you soak sweet potatoes before baking? ›

The cold water bath helps rinse the starch off the sweet potatoes so they're a bit more crispy. That said, if you do not have the time, you can still get crispy baked sweet potato fries by using high heat and a little drizzle of olive oil.

How do you thicken a sweet potato casserole? ›

Everything you'll need to make this recipe.

Choose orange sweet potatoes for the best flavor and sweetness. Brown sugar adds a depth of flavor with a hint of molasses and helps create a caramel-like sauce. All-purpose flour will help thicken the sauce and give some structure.

What variety of sweet potato is best for casserole? ›

Jewel. With copper skin and deep-orange flesh that's moist and tender when cooked, the jewel is a go-to potato for traditional baking and casseroles.

What to pair with sweet potatoes? ›

If you're serving your oven baked sweet potatoes as a side dish, pair them with your favorite protein or vegetarian chili. For a topping, stick to butter, Greek yogurt, or sour cream, or try adding a dollop of cilantro lime dressing, tzatziki, chipotle sauce, pesto, guacamole, or a drizzle of tahini sauce.

What is the healthiest way to eat sweet potato? ›

Boiling sweet potatoes retains more beta-carotene and makes the nutrient more absorbable than other cooking methods such as baking or frying. Up to 92% of the nutrient can be retained by limiting the cook time, such as boiling in a pot with a tightly covered lid for 20 minutes.

Is it better to boil or bake sweet potatoes? ›

Baking can also cause an 80% drop in vitamin A levels, twice as much as boiling. Therefore, from a nutritional standpoint, boiling rather than baking should be recommended for cooking sweet potato.

How do you thicken up sweet potato casserole? ›

All-purpose flour will help thicken the sauce and give some structure. Maple syrup balances the sweetness and adds flavor. All granulated sugar can be too sweet.

What do I do if my potato bake is too runny? ›

Try letting the dish rest for 10 minutes or so to let the water get absorbed and let the sauce thicken. Try cooking your recipe longer.

Should sweet potato casserole be firm? ›

you should see it firm, but still paste like. Once it bulges and you start to see cracks, it will be overcooked. You don't need anything of those fancy gadgets for casserole! You can grab a potato masher or whisk and mash them up.

Is sweet potato casserole supposed to be jiggly? ›

Sprinkle the pecan topping mixture over the top of the sweet potato filling. Bake the casserole for 35 to 45 minutes, until the filling is hot, does not jiggle when you shake the dish, and the topping has browned.
